I love a good smoky flavor. My husband got a Traeger for Father’s Day a few years back and he was looking for more things to put on the smoker. I was craving my mom’s broccoli soup and thought what if I combined the flavors of smoked chicken and broccoli? Throw in some black beans to add some earthiness and hot sauce for some heat.
Scot smoked the chicken breasts for me and I was super excited to see how it would turn out. I start out cooking the onions, carrots and celery adding in herbs, wine and stock. I added some hot sauce and Worcestershire to round out the flavors. Added in the final ingredients and it ended up better than I imagined. If you don’t have a smoker, you can buy smoked chicken breast at your deli and ask them to cut it in thick slices and chop it up from there.

A smoky bowl of goodness rounded out with broccoli and black beans
In large pot melt 1/4 cup butter. Sauté carrots, onion, celery and broccoli stems for 5 minutes. Add thyme and oregano and sauté 2 minutes more. Add wine and deglaze pan. Add chicken stock and bring to a boil to reduce by one-third. Add Worcestershire sauce, hot sauce, smoked chicken, beans and broccoli florets: simmer until the broccoli is fork tender. Add cream, simmer for 5 minutes more and season to taste with salt and pepper. Add the remaining butter, stirring until melted.
