I know. It’s August. Summer is still here but with the kids starting back at school and pumpkins starting to appear I feel like the end is near. Fear not! Tomato Butter Toast tastes like summer but honestly will be good all year round. The tomato in the recipe is actually from tomato paste in a tube, aka Italian Toothpaste, so it can be made any time of the year.
When my husband took a bite he said it is like ‘za, but not. I used a thick slice of sourdough bread but you can use ciabatta or even small pieces from a baguette. You just want some chew there so not a thin slice. I mix parmesan and oregano into the tomato butter so it has those pizza flavors. I crisped up the prosciutto so that is reminiscent of really good pepperoni. The burrata has the creaminess that mozzarella has so I totally tasted what he was expressing.
I picture this on smaller pieces of bread for an aperitivo and a glass of sparkling wine or even better an Aperol spritzer. If you are having a cocktail party, you could serve this on a smaller scale. Make sure you have cocktail napkins as it is a little messy with the cheese and melting butter.
A larger piece of Tomato Butter Toast served with an arugula salad would qualify as the perfect lunch. It also would be really good served alongside a minestrone or vegetable soup.
Some other ways to try it would be to sprinkle a few red pepper flakes for heat. If it is summer you could tear up some fresh basil and top with it instead of the chives. If you like the sharpness of Pecorino Romano you could definitely sub it for the parmesan but cut back on the salt.
