Tomato Butter Toast
The Perfect Summer Appetizer
I know. It’s August. Summer is still here but with the kids starting back at school and pumpkins starting to appear I feel like the end is near. Fear not! Tomato Butter Toast tastes like summer but honestly will be good all year round. The tomato in the recipe is actually from tomato paste in a tube, aka Italian Toothpaste, so it can be made any time of the year.
Pizza, but not.
When my husband took a bite he said it is like ‘za, but not. I used a thick slice of sourdough bread but you can use ciabatta or even small pieces from a baguette. You just want some chew there so not a thin slice. I mix parmesan and oregano into the tomato butter so it has those pizza flavors. I crisped up the prosciutto so that is reminiscent of really good pepperoni. The burrata has the creaminess that mozzarella has so I totally tasted what he was expressing.
Appetizer or Light Lunch
I picture this on smaller pieces of bread for an aperitivo and a glass of sparkling wine or even better an Aperol spritzer. If you are having a cocktail party, you could serve this on a smaller scale. Make sure you have cocktail napkins as it is a little messy with the cheese and melting butter.
A larger piece of Tomato Butter Toast served with an arugula salad would qualify as the perfect lunch. It also would be really good served alongside a minestrone or vegetable soup.
Some other ways to try it would be to sprinkle a few red pepper flakes for heat. If it is summer you could tear up some fresh basil and top with it instead of the chives. If you like the sharpness of Pecorino Romano you could definitely sub it for the parmesan but cut back on the salt.

Tomato Butter Toast with Crispy Prosciutto and Burrata
A wonderful full of flavor appetizer or lunch bite.
Ingredients
- 1/4 softened unsalted butter
- 1 1/2 tablespoons tomato paste
- 3 tablespoons freshly grated parmesan
- 1/2 tsp dried oregano
- 1/2 tsp Diamond Crystal kosher salt
- 1/2 freshly grated pepper
- 3 oz. prosciutto
- 1 ball of burrata
- 2 tablespoons fresh chives, minced
- Fresh, thickly sliced bakery bread
- olive oil for the pan
Instructions
- Mix softened butter with tomato paste, oregano, parmesan, salt and pepper.
- Over medium high heat, place a cast iron pan with the bottom coated with olive oil.
- Once oil is hot add the bread. Toast on one side until lightly toasted.
- Flip the bread over., Carefully spread the tomato butter on the bread while in the pan. This will help the butter melt into those cracks and crevices.
- Remove the bread from the pan to rest.
- Carefully add the prosciutto to the same pan and fry until crispy
- To assemble, add the prosciutto to the toast. Gently break apart the burrata and place on top of the bread. Top with chopped chives and a twist of black pepper.
- Serve when warm.
This bite is so delicious!! We are addicted 🙂 Seriously could be a meal on its own with a side salad!
